Many cookbooks have conversion tables, oven temperature tables, and so forth but almost none of them will tell you how many pea pods or fava bean pods you’ll need for that recipe for pea soup or fava bean purée. Well here you go: some equivalencies. But remember that these are approximate measures because each pod will contain different numbers and sizes of peas and beans.
2 pounds pea pods = 2 1/2 cups of fresh peas
4 pounds pea pods = 5 cups of fresh peas
2 1/2 pounds fava bean pods= 1 pound shelled fava (3 cups) = 3/4 pound peeled fava (1 cup)
5 pounds fava bean pods = 2 pounds shelled fava (6 cups) = 1 1/2 pounds peeled fava (2 cups)
