This is about the easiest way to make green beans sparkle in taste and color. I often serve green beans with red meat and this preparation occasionally appears on our Thanksgiving table. It makes a nice room temperature antipasto the day after.

Yield: Makes 4 servings
Preparation Time: 20 minutes
1 pound green beans, trimmed
2 tablespoons extra-virgin olive oil
1/4 cup pine nuts
1. Bring a large pot of water to a boil and blanch the green beans for 4 minutes. Drain and cool the beans quickly under cold running water so that they stop cooking.
2. In a skillet, heat the olive oil over medium-high heat, then cook the pine nuts until golden, about 1 minute. Add the green beans and when the pine nuts begin to brown take the pan off the heat and serve.
