In Greece, one will find tzatziki served with just about anything. It is a cool accompaniment to grilled foods, delightful on top of rice, and quite nice as a meze scooped up with pieces of flatbread. They enjoy tzatziki as much in Turkey where they call it cacuk (pronounced jajuk), and they eat it the same way. Use the lesser amount of oil suggested if the yogurt is not thick. The better the quality your yogurt, the better will be your tzatziki. You can also make your own homemade yogurt.
Yield: Makes 2 cups
Preparation Time: 5 minutes
2 cups whole plain yogurt
¼ to ½ cup extra-virgin olive oil
1 small peeled, seeded, and grated cucumber with its water squeezed out
3 to 5 garlic cloves mashed with ½ teaspoon salt
2 tablespoons finely chopped fresh dill
Put the yogurt in a bowl and beat the olive oil
into it. Add the remaining ingredients
and blend well. Refrigerate before using
and serve cold.
Variation:
Note: Tzatziki is typically served as a meze, on its own, or as a dip for flatbread or romaine lettuce leaves. It's also delightful with grilled kebabs.
