Tarte aux Mûres

Although the biggest producer of blackberries in Europe is Croatia, they are popular in France when in season. This tart is a simple and straightforward preparation that is delightful as an easy dessert.

Yield: Makes 4 servings
Preparation Time: 30 minutes
1 recipe pastry cream
2 1/2 ounces puff pastry
2 tablespoons apricot preserved
2 tablespoons water
2 1/2 cups fresh blackberries
1. Prepare the pastry cream.
2. Preheat the oven to 385degrees F.
3. Divide the puff pastry in half and roll each out until 10 x 5 inches. Place on an un-greased baking tray and bake until golden brown and puffed up, about 10 minutes. Remove from the oven and let cool.
4. Meanwhile, combine the apricot preserves and water in a microwavable bowl or a small saucepan and melt together in a microwave or over medium heat. Set aside.
5. Using your fingers press down in the center of the raised puff pastry, crushing the pastry so you can spread the pastry cream. Divide the pastry cream into the center of each puff pastry and spread almost to the edge with a knife. Arrange the blackberries attractively on top of the pastry cream so it is covered. Brush the apricot glaze over the blackberries and refrigerate until needed, but serve at almost room temperature.
Variation: You can use raspberries, strawberries, or boysenberries instead of blackberries if you like.
