Near the apartment I once rented in Venice was a café where every morning I would treat myself to this marvelous panino with a cappuccino. Buy cooked shrimp to save time if you wish.

Yield: Makes 4 servings
Preparation Time: 12 minutes
4 soft rolls
1/2 pound cooked medium-size shrimp
2 to 3 hard-boiled eggs, sliced
Mayonnaise to taste
Salt and freshly ground black pepper to taste
1. Slice open the rolls. Divide the shrimp and sliced eggs in fourths.
2. Spread the mayonnaise on both sides of the rolls. Lay down the shrimp, salt and pepper to taste, cover with the eggs and top with the other side of the roll. Press down gently and serve.
