Pomodori Arrosto sulla Griglia

This easy recipe from Sardinia requires firm tomatoes that will not fall apart when they are grilled. The garlic flavors the bread crumbs in such a gentle way that these tomatoes make an ideal accompaniment for grilled meat.

Yield: Makes 3 to 4 servings
Preparation Time: 35 minutes
2 garlic cloves, peeled and finely chopped
2 tablespoons finely chopped fresh parsley
3 ripe but firm tomatoes, sliced in half horizontally and seeded
Salt and freshly ground black pepper to taste
1/2 cup dry bread crumbs
1/2 cup extra-virgin olive oil
1. Prepare a low charcoal fire or preheat a gas grill for 15 minutes on low.
2. Sprinkle the garlic and parsley on the tomatoes. Season with salt and pepper. Sprinkle the bread crumbs on top and drizzle with olive oil. Place the tomatoes, bread crumb side up, on the grill and cook without turning until they are spotted with black on top, about 15 minutes.
