For this panino you will need a large (1/2 pound) chunk of Parmigiano-Reggiano cheese in order to shave off thin pieces with a sharp knife or the widest setting of a cheese grater, although you will not be using a 1/2 pound of cheese,

Yield: Makes 4 servings
Preparation Time: 5 minutes
4 soft rolls
Parmigiano-Reggiano cheese shavings (about 2 ounces)
1/2 cup chopped large green olives
8 salted anchovy fillets, rinsed
Extra-virgin olive oil from drizzling
1. Slice open the rolls. Divide the parmigiano shavings, olives, and anchovy fillets into fourths.
2. Drizzle some olive oil on each side of the rolls. Layer the parmigiano shavings on one side of the rolls so that it is covered without overlapping. Cover with olives and 2 anchovy fillets per roll. Put the tops on and press down gently and serve.
