Canned asparagus is soft from cooking and perfect for sandwiches as it will not slip out when bitten into.

Yield: Makes 4 servings
Preparation Time: 5 minutes
4 soft rolls
8 ounces canned asparagus, drained
8 to 16 salted anchovy fillets, rinsed
Mayonnaise to taste
1. Slice open the rolls. Divide the asparagus and anchovy into fourths.
2. Spread mayonnaise on each side of the rolls. Layer the asparagus down on one side and cover with 2 to 4 anchovy fillets per roll. Put the tops on and press down gently and serve.
