Simple tastes are so astonishing as in this delicious
combination. In this recipe, microwaving
is the fastest and most convenient way to prepare the pancetta, an
Italian cured bacon.

Yield: Makes 4 servings
Preparation Time: 5 minutes
8 slices pancetta (about 1/4 pound)
8 small soft rolls
3 ripe plum tomatoes, sliced
Extra-virgin olive oil for drizzling
Freshly ground black pepper to taste
Put the slices of pancetta between paper towels and microwave until crisp. Slice open the rolls and lay the tomato slices on one side, cover with pancetta. Drizzle the olive oil on the other half of the roll and sprinkle some pepper on top of the tomatoes. Cover and press down gently and serve.
