Porchetta is an Italian-style roast pork cold cut sold in Italian delicatessens. If you can’t find it you could use Black Forest ham or leftover roast pork.

Yield: Makes 4 servings
Preparation Time: 5 minutes
4 soft rolls
4 to 6 ounces porchetta, thinly sliced
6 ounces fresh mozzarella cheese, sliced
Extra-virgin olive oil for drizzling
Freshly ground black pepper to taste
1. Slice open the rolls. Divide the porchetta and mozzarella into fourths.
2. Drizzle each side of the rolls with olive oil. Grind the pepper on each side. Layer the porchetta and mozzarella on one side. Put on the tops and press down gently and serve.
