When I travel in Italy I love to buy a couple of panini, little sandwiches sold at cafés, for a mid-morning bite to eat. This particular panino might seem strange, but the tastes are naturally complementary, and really very good with lots of mayonnaise.
Yield: Makes 4 servings
Preparation Time: 5 minutes
8 small soft rolls
16 stalks hearts of palm, sliced lengthwise
3 ripe plum tomatoes, thinly sliced
16 stalks canned asparagus
Mayonnaise to taste
1. Slice open the rolls. Divide the hearts of palm, tomatoes, and asparagus into eighths.
2. Coat each side of bread with mayonnaise and layer the ingredients. Put the tops on and press down gently and serve.
