Although avocado is not a traditional Italian ingredient one does now see it in markets in Italy and used especially in salads. Avocado is a rich tasting fruit and you don't need to use a lot in this panino.

Yield: Makes 4 servings
Preparation Time: 10 minutes
4 soft rolls
4 to 6 ounces prosciutto di Parma, thinly sliced
1 small ripe avocado, stoned and very thinly sliced
3 ripe plum tomatoes, thinly sliced
4 fresh basil leaves, chopped
Extra-virgin olive oil for drizzling
Salt and freshly ground black pepper to taste
1. Slice the bread open. Divide the prosciutto, avocado, tomato and basil into fourths.
2. Drizzle both sides of the bread with some olive oil. Layer the prosciutto, tomato, and avocado on one side of the bread. Sprinkle the basil leaf on, then the salt and pepper lightly. Put the tops on and press down gently and serve.
