Grilling a nice round of tuna cut from the tail end looks quite nice and is an easy way to feed four people. In Italy the same might be done with albacore, little tuna, or bonito. A good fishmonger who buys his tuna whole should be able to cut it for you, otherwise buy four tuna steaks. This dish can be preceded by Tomato, Artichoke, and Montasio Salad in Green Sauce.
Yield: Makes 4 servings
Preparation Time: 15 minutes
For the salsa verde
1/4 cup very finely chopped fresh parsley
1 large garlic clove, very finely chopped
6 tablespoons extra-virgin olive oil plus more as needed
For the fish
2 pounds tuna, cut in one round slice from the tail end, between 1/2 to 3/4 inch thick
Salt and freshly ground black pepper to taste
1. Prepare a charcoal fire or preheat a gas grill on high for 20 minutes.
2. In a bowl, whisk together the ingredients for the green sauce and set aside.
3. Coat the tuna round lightly with olive oil, salt, and pepper. Place on the grill for 4 to 5 minutes, turn and cook for another 5 to 6 minutes. Transfer to a serving platter and cover with as much of the green sauce as you like. Serve immediately.
