Bruschetta (pronounced broos-KETT-ta) is a grilled bread popular now throughout this country. Originally, grilling bread was a way to use old bread. So this recipe might sound ridiculous, but you will be amazed how a slice of stale Italian bread when dipped in warm water and placed on the grill is not only edible but extraordinary. The principal is the same for Red Slice which is an even better but slightly more involved recipe.
Yield: Makes 4 servings
Preparation Time: 25 minutes
4 large slices 2-day-old Italian or French country bread
Tepid water as needed
Extra-virgin olive oil for drizzling
1. Prepare a hot charcoal fire or preheat a gas grill for 15 minutes on high.
2. Very quickly and briefly dip both sides of the stale bread in a pan filled with tepid water. Place on the grill, and when one side has even grid marks turn to other side and grill until no longer soggy, 5 to 10 minutes. Transfer to a serving platter and drizzle with olive oil.
Variation:
You can use fresh bread too, in which case do not dip in water before grilling.
