The crunch of fresh raw fennel makes a nice companion for grilled food such as chicken. Algerians quite favor raw vegetable salads and this is very nice in the summer.
Yield: Makes 4 to 6 servings
Preparation Time: 10 minutes
1 fennel, bulb only (about 1 1/2 pounds), chopped
1 small onion, chopped
4 ripe plum tomatoes, seeded and quartered
12 large green olives
1 garlic clove, finely chopped
Salt and freshly ground black pepper to taste
Extra-virgin olive oil to taste
8 fresh mint leaves, finely chopped
In a bowl, mix all the ingredients well, tossing several times. Serve at room temperature.
