This marinade is perfect for swordfish, and very nice with beef steaks such as skirt steak or sirloin tips or pork tenderloin.
Yield: Makes 1/2 to 3/4 cup marinade (enough for 1 to 1 1/2 pounds fish, beef or pork)
Preparation Time: 1 minute
1/4 cup extra-virgin olive oil
Juice from 1 large orange
1 tablespoon dried oregano
1 to 2 garlic cloves, peeled and finely chopped
Mix all the ingredients together and use to marinate the fish or beef in the refrigerator, covered, for 2 hours. Remove the food from the refrigerator 15 minutes before grilling.
