This is a sauce I use on plain grilled fish such as
halibut, haddock or cod.
Yield: Makes 1/4 cup
Preparation Time: 10 minutes
4 salted anchovy fillets, rinsed
2 large garlic cloves
2 tablespoons finely chopped fresh parsley
3 tablespoons extra-virgin olive oil
1/2 teaspoon freshly squeezed lemon juice
In a mortar, pound the anchovy fillets, garlic, and parsley with a pestle until a pesto . Slowly beat or pound in the olive oil and lemon juice.
