This is one of the quickest ways to prepare a steak, or a meal. I typically make this dish when I'm alone, although you can make it for two also. It's based on the French cooking principle known as a la minute, in other words, minute steak. Ideally you will cook this in a carbon steel pan, but a cast-iron skillet will work well too, although you need a few extra minutes for it to get hot.
Yield: Makes 1 serving
Preparation Time: 10 minutes
1 thinly cut T-bone steak (about 1/2 pound on the bone)
1 tablespoon prepared horseradish sauce
2 tablespoons mayonnaise
Salt and freshly ground black pepper to taste
1. Preheat the pan until smoking hot.
2. Pound the steak while on the bone until a bit thinner between two sheets of wax paper or while it's still in its package wrapping. Place the steak in the pan and cook until rare, about 4 minutes in all.
3. Meanwhile, stir the horseradish and mayonnaise together and serve on a plate alongside the steak. Season with salt and pepper.
