Another popular zeytinyağlı preparation (olive oil food) is this dish made with green beans. Turks are very picky about their green beans. In this preparation the beans should be picked very fresh from the plant about an hour before cooking. In Turkey, so many families have vegetable gardens that preparations such as this one are very popular. A local farmer's market will have the quality of bean necessary for a successful rendition of this recipe if you don't have your own garden.
Runner beans can also be used in this Turkish preparation served at room temperature. The beans are cooked a long time, until they are completely soft. If your beans are old, you may have to cook them up to 1 1/2 hours, but try to avoid old beans.

1. Put the green beans, onion, and tomatoes in a large skillet and mix well with your hands. Salt and mix again with your hands. Pour the olive oil over the vegetables and cook, covered, on medium heat for 15 minutes. Pour in the water and continue to cook. Sprinkle over the sugar and shake the skillet. Cook until the beans are very tender, soft, 45 minutes to 1 1/2 hours, moistening with more water if necessary. The vegetables should never be swimming in water, only moist.
2. Turn the heat off and uncover the skillet, letting the vegetables cool completely. Serve at room temperature. Drizzle some olive oil over the beans before serving.
