
Lenticchie in Umido

Difficulty: Easy but long cooking time
This is a classic Italian dish called lenticchie in umido that is meant to accompany everything from cotechino sausage to zampone to duck. I like to serve it with duck. recipes can get a little more involved by mine, but this is the basic recipe.

Yield: Makes 2 servings
Preparation Time: 1:10 hours
2 1/2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped bacon
1/2 small onion, finely chopped
3/4 cup green lentils
1 cup water
3/4 teaspoon salt
In a heavy saucepan, heat the olive oil over medium-high heat, then cook the bacon and onion until the onion is translucent, stirring, about 4 minutes. Add the lentils, water, and salt, bring to a boil, reduce the heat to very low, cover, and simmer until the lentils are tender and the water absorbed, about 1 hour. Serve hot.
