This quick recipe for zucchini is delicious at room temperature or with Sauté of Sausage, Mushroom, and Artichokes. But I often use leftovers as an antipasto.
Yield: Makes 2 servings
Preparation Time: 25 minutes
2 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
2 garlic cloves, finely chopped
2 zucchini, peeled and thinly sliced
1 plum tomato, chopped
Salt and freshly ground black pepper to taste
1 tablespoon finely chopped fresh basil leaves
1. In a large skillet, heat the olive oil over medium-high heat, then cook the onions and garlic until translucent, stirring frequently, about 5 minutes.
2. Add the zucchini, tomatoes, salt, pepper, and basil, reduce the heat to medium, then until the zucchini is tender, turning occasionally, 10 to 15 minutes. Serve hot or warm.
