Grill these skewers of shrimp and scallops until the shrimp are orange and the scallops are a light golden brown. Make sure the pieces towards the center of the skewer are grilled through by spacing the scallops and shrimp on the skewer so that they don’t touch each other.

Yield: Makes 4 servings
Preparation Time: 2:20 hours
1 pound medium shrimp, shelled
1 pound sea scallops
Juice of 1 orange
1/2 cup dry white wine
1/4 cup extra-virgin olive oil
1/4 cup finely chopped fresh oregano or 1 tablespoon dried oregano
Freshly ground black pepper to taste
Six 10-inch wooden skewers
1. Place the shrimp and scallops in a 9 x 12-inch ceramic or glass baking pan and add the orange juice, white wine, olive oil, oregano, and pepper to taste. Leave to marinate in the refrigerator, covered, for 2 hours. Remove from the refrigerator 15 minutes before grilling.
2. Prepare a hot charcoal fire or preheat a gas grill for 15 minutes on high.
3. Remove the shrimp and scallops from the marinade, reserving the marinade. Skewer the shrimp and scallops so they don’t touch. Place on the grill and cook, turning occasionally, until the shrimp are orange and the scallops a light golden brown, about 20 minutes. Baste with the marinade during grilling. Serve hot.
