Many fishmongers in Italy buy their tuna whole and offer a perfectly round cut of tuna from the tail end. Depending on its diameter it can served 4 to 8 people. Grilling this round of tuna looks quite impressive. The same is done with other similar fish such as albacore, little tuna, and bonito. The recipe of course can be done with indivifdual tuna steaks which you are more likely to find. This dish can be preceded by Tomato, Artichoke, and Montasio Salad in Green Sauce.

Yield: Makes 4 servings
Preparation Time: 15 minutes
For the salsa verde
1/4 cup very finely chopped fresh parsley
1 large garlic clove, very finely chopped
6 tablespoons extra-virgin olive oil plus more as needed
For the fish
2 pounds tuna, cut in one round slice from the tail end, between 1/2 to 3/4 inch thick
Salt and freshly ground black pepper to taste
1. Prepare a charcoal fire or preheat a gas grill on high for 20 minutes.
2. In a bowl, whisk together the ingredients for the green sauce and set aside.
3. Coat the tuna round lightly with olive oil, salt, and pepper. Place on the grill for 4 to 5 minutes, turn and cook for another 5 to 6 minutes. Transfer to a serving platter and cover with as much of the green sauce as you like. Serve immediately.
