This is a Sicilian-style grill preparation in which you will want to use the highest-quality tuna. The tuna steaks are dredged in garlic and herbed bread crumbs to form a coat that will become crisp and golden when grilled.
Yield: Makes 4 to 6 servings
Preparation Time: 30 minutes
6 fresh tuna steaks, 3/4 inch thick (about 2 pounds total)
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
1 cup dry bread crumbs
1 garlic clove, finely chopped
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh mint
Lemon wedges
1. Prepare a hot charcoal fire or preheat a gas grill for 15 minutes on high.
2. Rub the tuna steaks on both sides with some oil, and season with salt and pepper. Mix together the bread crumbs, garlic, parsley, and mint. Dredge the fish in this mixture.
3. Drizzle each steak with some olive oil and place on the grill, Cook, turning only once, until deep black grid marks appear, about 5 minutes on each side. Serve with lemon wedges.
Variation:
Marinate the tuna in 1 cup dry white wine, 1/4 cup olive oil, salt, and pepper for 2 hours before dredging.
