Today we are lucky to have many producers of food so concerned not only with the healthiness of their product, but with the taste and sustainability of raising such good food. This dish I make with Niman Ranch pork. Niman Ranch is a producer of ranch-raised meats in California which produced a taste you simply will never find in supermarket meats. You can order it over the internet at http://www.nimanranch.com/. This dish is really quite good and the ricotta cheese just makes it look good and taste even better. The recipe is inspired by the fried pork dish made for me by the owner of the hotel I stayed in on the island of Rhodes.
Yield: Makes 4 servings
Preparation Time: 30 minutes
1 1/4 pound pork shoulder, fat and sinews removed, cut into 1 1/2 x 1/2 inch pieces
Salt and freshly ground black pepper to taste
1/3 cup water
1/2 teaspoon dried oregano
1/2 pound fresh ricotta cheese
1. Preheat a cast-iron skillet over high heat for 15 minutes.
2. Season the pork with salt and pepper. Lay the pork in the skillet and leave it without moving or touching them until golden and crispy brown on the bottom, about 4 minutes. Turn with a spatula and cook for another 4 to 5 minutes. Add the water and once the water has mostly evaporated and turns into a syrupy sauce, sprinkle on the oregano and transfer to a serving platter or dish. Place the ricotta cheese on randomly in clumps, let sit for 3 minutes then serve.
