In this simple preparation store-bought cheese tortellini is fine although your own would be better. It’s a very flavorful dish and loved by everyone.

Yield: Makes 4 servings
Preparation Time: 35 minutes
1 pound mild Italian sausage, casing removed, meat crumbled
1 pound cheese tortellini
3 tablespoons extra-virgin olive oil
3 tablespoons finely chopped fresh parsley
1/2 cup freshly grated Parmigiano-Reggiano cheese
1. Place the sausage in a skillet and turn the heat to medium, then cook until the sausage is browned and cooked through, turning frequently, about 30 minutes.
2. Meanwhile, bring a large pot of abundantly salted water to a boil, then cook the tortellini until tender and floating on top of the water. Drain and transfer to a bowl and toss the tortellini with the olive oil, sausages, parsley, and parmigiano cheese. Serve hot.
