This is so easy and quick. I made it one afternoon when I realized I had to leave the house in 15 minutes but wanted to get a non-fast food bite to eat. The real surprise was how good it was.

Yield: Makes 1 serving
Preparation Time: 5 minutes
1/4 pound fresh store-bought tortellini, your choice of stuffing
1/4 cup extra-virgin olive oil
Freshly grated Parmigiano-Reggiano cheese to taste
In a medium-size nonstick skillet, heat the olive oil over medium-high heat until nearly smoking, then cook the tortellini until they turn golden brown, about 5 minutes, shaking and tossing so all sides are browned evenly. Remove from the skillet with a slotted ladle to a pasta bowl, leaving the oil behind. Sprinkle with parmigiano cheese and serve.
