This is a fast lunch frittata that utilizes any leftover tomato sauce from Spaghetti with Tomato Sauce. If you haven't any leftover homemade tomato sauce use canned store-bought crushed tomatoes but not the store-bought tomato sauce or mix some tomato paste with water.

Yield: Makes 2 servings
Preparation Time: 8 minutes
4 large eggs, beaten until frothy with a little salt
1 mild Italian sausage link, casing removed and meat crumbled
1/4 cup dry white wine
1/4 cup homemade tomato sauce or crushed tomatoes
1 ounce fresh mozzarella cheese, sliced
1. Preheat the broiler.
2. In a medium-size nonstick skillet, cook the crumbled sausage meat over high heat until it loses all pinkness, stirring and breaking up the sausage further, about 2 minutes. Pour in the white wine and let it evaporate, about 1 minute.
3. Pour in the eggs, immediately spread some tomato sauce around and layer the mozzarella. Once the bottom sets, about 30 seconds to 1 minute remove and place under the broiler until the top sets, about 2 minutes. You can do this with the oven door open. Serve immediately.
